Cream together butter and sugar. Add the honey and mix. Then add the dry ingredients and mix well.
Set aside for 24 hours in the fridge.
Preheat the oven to 180º.
Roll out the dough on 4mm thick and cut it with a cookie cutter.
Bake it for 8 minutes. The cookies must not be hard but still softy. Remove them from the cookie sheet and cool on a rack.

Prepare the icing with 1 egg white and 150g icing sugar. With a piece of bake paper, form a cone and pour the icing inside. Cut the point of the cone and decorate the Gingerbread Men.

Basic around Christmas: Gingerbread men recipe! You’ll be able to make them scratch with your kids and make the men, houses, trees… whatever you want! Maybe next year I won’t buy the pre-made ones and do this with my girls. I haven’t had much time for anything lately, and still wanted to give the girls something fun, SO… we have store bought Gingerbread houses kids. We have not even had much time to bake at all this year, which NEVER happens. Oh well, maybe next year things will be different… maybe next year we’ll be able to make some gingerbread men from scratch, since we enjoy baking so much. Maybe. :)
