christmas recipe: Candied orange /orangette

How was the first weekend of December? Did you go to the Christmas market? Have you decorated your house? Did you buy the first gift?
In my case, I only had time to decorate the apartment. I will go to the Christmas market this week to have a glass of Glühwein (German mulled wine).
Today’s recipe is the Orangette. I have to say, this is not one of my favorite Christmas recipes (I don’t like much the combination of  chocolate and fruit…) but Louis loves them so I make Orangettes with pleasure 😉
This recipe is several steps long but very easy to do. They make an elegant homemade gift!


2 organic oranges
100g dark chocolate
Water (300g)
Sugar (300g)
The first step is preparing the candied orange.
1. Peel the oranges and cut the peel in slices.
2. Put them in a big sauce pan with cold water and bring them to a boil. Strain and rinse. Repeat this operation 2 more times.  It’s important to bring them 3 times to boil to remove the bitterness from the orange peel.
3. Now, put in a sauce pan the sugar and the same weight of water. Enough to cover all the orange peels. Bring it to a boil. Add the orange slices and cook over moderate heat until the liquid is reduced to a thin syrup and the orange slices are translucent, about 1h30.
4. Transfer the orange slices to a cake rack to cool. Reserve the syrup for another use. You can for example use it as topping for the gingerbread cake.
Now you can prepare the topping chocolate:
Cut a sheet of parchment paper. Melt dark chocolate in a hot-water bath. When it’s 32ºC warm, dip the 2/3 of the length of each candied orange slice in the chocolate and place it on the parchment.
Note: To have a nice shiny chocolate melt the chocolate until it’s 52º warm; then put it on a cold-water bath until 22º and put it again on a hot-water bath until 32ºC.
