Tachann! Christmas time can begin on Lime & Cream! I have to confess that I was waiting for that since quite a long time. I have never been so early in the Christmas mood and it feels so good ;)!
Let’s begin this series of Sweet Christmas Recipes with a softy Gingerbread:
Ingredients (serves 2 cakes 18cm long and 7cm height):
130g whole milk
9g baking soda
6g cinnamon powder
1g cardamom powder
2g ginger powder.
Some candied orange
Preheat your oven to 165°C.
Melt the butter and let it cool.
In a sauce pan, warm the honey to 50°.
Sift together the flour, baking soda and spices.
In the bowl of an electric stand mixer fitted with a whisk attachment (or in a normal bowl) whisk the eggs with the honey. Add the milk and then the butter.
Then remove the whisk attachment and replace for the paddle attachment, add the powder mix and mix well. If you do not have an electric stand mixer, use an electric whisk.
To finish, cut the candied orange in little cubes, and add at your taste.
Your dough is ready!
Pour it in a cake form of 18long and 7cm height.
Bake it for about 45-50 minutes to 160º.
Remove it from the oven and coat the cake with orange sirup or orange or apricot jam. Next week I will share a recipe from which you can get the orange sirup!
